of the Bilberry Flower, direct access to the Dap Dom lake.

Nutmegs, bay leaves, thyme, curry, cloves, bouquet garni, paprika, oregano, turmeric and cinnamon… with these ingredients, our new Brittain chef will show you his native country, the Armor coasts’ dishes’ tastes.

Working since last year Autumn at la ferme du Colvert, licensed caterer and butcher, Freddy Mellin, 26-years-old, fell for the charm of French-Vietnamese gastronomy.

From now on, far away from his Brittain lobsters, he prepares mimosas eggs, duck cooked with oranges or French bread… helped by his Vietnamese colleagues, Tan, Dung and the cooks. For his beloved cuisine, he commands from la ferme du Colvert to our sailboats in Halong Bay for ceremonies and on request. 

   
   
   
  • Concerned about respecting our concept Small and Beautiful, after having started well with the gastronomic restaurant Vit Co Xanh, Freddy opens his second line of dishes, simple and Brittain or Mediterranean, and his wine suggestions, in his rustic kitchen in the beautiful traditional stilt house made of wood, the Bilberry Flower house (Hoa Sim),  100 m away from the principal Orchid house.
  • Of course, the prices remained reasonnable. At Freddy’s, from 6 € / P, you are invited to a thematic dinner : one delicious copious typical dish : Paëlla, pizza, cooked pork meats, barbecue, couscous, sauerkraut…Or tasty local dishes : Cantonese rice (com rang), fried nooddles (My xao), raviolis (Banh Cuon) , roasted suckling pig (Lon Quay), Nems…
  • At Freddy’s, you can be given cooking classes, on request or customized services. Our gentle Brittain chef will teach you the sausages making…Go to see Acquisition and Produce of the land. His Vietnamese colleagues will take care of the demo and tasting of the roasted suckling pig, the rice alcohol distillery, the Nems rolling, or the rice Raviolis (Banh Cuon) making… And, for sure, the Vietnamese decoration and French table disposing rules. Until the romantic dinner for the Lovers.
  • Third step : for the families or small groups renting the houses who wish to be like at home, Freddy will organize your own cuisine, where, with an assistant’s help, you will get to cook your own family meal, like at home. Or why not, the Muong ethnic dishes like the village natives’. Without restaurant, or close tables, still enjoying la ferme. Our 10 cosy houses have their own briefly equiped kitchen and a dining-room and a living-room corner. Each one of them is ruled by a hostess (or a Muong family). In Vietnamese country’s sweetness, you live happily savoring your meals freely.
